Viticulture, the art of cultivating vines for wine, is one of the oldest agricultural arts. Modern viticulture is often mechanised and aimed at productivity, forcing vines to overproduce. By contrast, this series of workshops is about the various life stages of the vine and its natural responses to the seasons. It is about quality over quantity and a fundamental respect for the life of the soil. It is about biodiversity and the symbiotic relationship between plants for creating balance in soils. It is a hands-on discovery of methods of pruning, trellising, weeding, fertilising, attaching, trimming, treating, protecting and harvesting that provides a complete overview of the life of the vine. The workshops, lead by Antoine de Clermont Tonnerre who is the consultant and sometimes the winemaker for a number of newly planted vineyards throughout the Île-de-France, has years of experience working in biodynamic and organic vineyards. The first workshop, which takes place in November, is about pruning and provides an overview of the history of pruning along with a detailed explanation about how pruning shapes the vine and determines production. All workshops inlcude wine tasting with seasonal nibbles, real bread and cheese.
